I Spy the Beautiful

We’ve been getting it wrong this whole time. Below, is a cashew fruit. The cashew as we know it is encased in a hard brown shell at the top, so acidic it has to be roasted open. Meanwhile, underneath that is the cashew fruit!

It is amazing. This squishy yellow water balloon of a fruit that bursts in your mouth when you bite into it. The inside is white and juicy. It’s a sweet fruit that tastes like… I don’t even know… Delicious. It tastes like delicious.

The reason we never see these guys in the States is because they’re so delicate that transportation would be next to impossible. I’m trying to not be such an American about it and to appreciate that there are some things about the jungle that will only ever be here and no where else. That just makes it more wonderful in the end.
