5/31 Breakfast, Lunch and Dinner!

Breakfast: 

I went to First Watch with Joe after graduation practice today and ate for really cheap! (only $10 for the both of us since I have a discount! ) I brought along my own almond milk, agave syrup and vegan soy free (Earth Balance) butter! I had cranberry nut oatmeal with walnuts and bananas. I added some almond milk and agave syrup and it was sooo delicious! I got whole wheat toast dry and added my vegan butter. I also got fruit! YUM.

Lunch: non-existent….ugh not a happy camper

Dinner: I was so starving and so moody no one wanted to be around me… lol

My family and my Sweedish friend Marisa, went out for vegan pizza and it was sooo good! This local pizza place is squeezed between a family dollar store and bingo land….very sketchy part of town but they have some dang good pizza! My dad went and got regular pizza and my mom had a slice of both and said that my pizza tasted better in comparison! YAY VEGAN FOR THE WIN! I got some hummus with veggies as an appetizer so my hunger wouldn’t make me hurt someone lol. 

Snacks:

I took a vegan cupcake to go from the pizza place and when I got home I had some raisins (:

5/28 Breakfast, Lunch, Dinner & Snacks

Breakfast:

I had two of my super charge me cookies ! They were very filling and gave me enough energy to go until 3pm when I was hungry and had low energy at work.

Lunch:

I had a bowl of veggie soup, a bowl of fruit 

Dinner:

My mom made whole wheat pasta with marinara sauce and baked me a sweet potato, and some grilled peppers. 


Snacks:

Making Super Charge Me Cookies (The gluten version)

Thanks to Nats Healthy Kitchen, I found this delicious, healthy cookie recipe! These cookies are packed with antioxidants, fiber, iron and omega 3s!! The recipe calls for flax seed, black strap molasses, oats and I added some chia seeds! You’d never know they were vegan..

The mix ins I used were sun flower seeds, craisins, vanilla extract, ground cinammon and chia seeds.

Two tips I want to mention about this recipe.. I only cooked them on 355 degrees for 10 minutes. The recipe says 13 minutes but that would’ve been way too long. I think 8-10 would be plenty of time. I also needed to but around 3-3.5 tsp of coconut oil since the original mixture was much too dry to even form into balls. I simply microwaved the coconut oil since I keep mine in the fridge for 30 sec at a time checking on the melting process and then measure the liquid. 

I DEFINITELY reccommend making these! So healthy and my mom and I are obsessing how good these taste right now!

5/27 Breakfast, Lunch & Dinner

Breakfast:

I went to whole foods last week and picked up a few things. I had a sample of a vegan meal replacement that is very nutritious, yummy and has so many healthful benefits to it that I just had to buy a sample packet! I thought today was a good day to make use of the packet and bring it to work with me…for some reason I could not get the consistency right and it just didn’t taste the same. So I opted for a 22 day vegan pumpkin seed bar instead of the shake. I put it in the refrigerator for later…I might throw the shake in the blender and add banana and strawberries to it in hopes to make it taste better?? Ugh, I hope I can make something work out because that packet was $5!

HOW GROSS DOES THAT LOOK?! lol

Lunch:

I took 2 bowls of veggie soup home from work along with a bowl of mixed fruit. I am obsessed with first watch’s veggie soup, and it’s vegan, so I always snap two bowls (I get 50% off) and save a bowl for later! 

Dinner: My parents just got home today from Ohio and so we all went out to Jpan, a sushi place near our house. I got edamame, two vegan sushi rolls (avocado and cucumber made with brown rice), wakame seaweed salad along with a side of brown rice. The brown rice was mainly for the sushi I’ve been dying to make at my house! We unfortunately don’t have a rice cooker…and I don’t have the patience to let it simmer for 2 hours over the stove top…so I attempted to microwave it for 10 minutes…It was an utter fail. I had to throw away the rice! 😦

Oh well! I’ll try it again next time and hopefully have some pictures to share!
