7/25 Breakfast, Lunch & Dinner

Breakfast:

Oatmeal with raisins, almond milk and sliced almonds!

Lunch:

Leftover Chana Masala (curried chickpeas with jasmine rice) and some organic carrots and hummus

Dinner:

Panera with my mom ! I had a bowl of black bean soup and I ate half of a spinach salad with blueberries, strawberries, cucumbers, sliced almonds and tomatoes without dressing.

Dessert: 1/2 a vegan chocolate chip cookie!

7/24 Breakfast, Lunch & Dinner

Breakfast:

Cinnamon Raisin Ezekiel Cereal with almond milk

Blueberries, and strawberries

Lunch:

This is when the crash happened… I went to whole foods and got some vegan thai lo mein and pasta with veggies and put it together in a little box for 6$ and I was eating it as my friend Cody was driving and he was taking a left crossing over 2 lanes when he didn’t see the oncoming car and the passenger side got hit pretty badly… The door was completely pushed in I was surprised there was room left for me. I’m so thankful I’m still alive!

Dinner:

I needed some good vegan comfort food after the crazy day I had so we went to Tandoor an indian restaurant and I got chana marsala the chickpea curry dish with jasmine rice. It was lovely.

Dessert:

I ate 9 vegan smores (:

Sorry for my absence!

I was in a very serious car accident yesterday and I’ve been so busy with school and life that I haven’t had time to track what I’ve been eating! I definitely want to try to make this part of my college life so I can keep up with being vegan through college.

Luckily I don’t have any broken bones! I’m just very badly bruised and sore. 

What I’ve eaten today:

Oatmeal with raisins, almond slices and almond milk as well as an organic apple with organic peanut butter

 

7/18 Breakfast & Lunch–Cous cous and avocado really compliment eachother!

Breakfast: oatmeal with cranberries, sliced almonds and almond milk

Lunch: Cous cous with spinach, cherry tomatoes, cucumber, avocado, a touch of lemon juice and a touch of ume plum vinegar along with some hummus mixed in for added flavor! Quite tasty!!

7/17 Breakfast, Lunch & Dinner

Breakfast: 

Oatmeal with chia seeds, raisins and almond milk with two organic peaches on the side

Lunch: 

I needed to clear out the fridge for my large grocery haul later on so I ate what was left of my norrito bowl from Tijuana Flats (rice, black beans, refried beans, lettuce and olives), a small amount of leftover chia seed oatmeal, organic cauliflower, an organic peach, and an apple and cinammon bun with organic peanut butter. 

Dinner: 

So far I’ve had a bowl of veggie soup from Earth Origins… I’m waiting for my parents to get home so I can eat dinner with them. So there will be more to come (:

My vegan conscious box came in the mail today! I got my first month free! There were a bunch of samples in there a lot of powdered energy drinks, vegan parmesan cheese, a hangover supplement, a lubricant, a sea salt brand with herbs and veggies and some assorted teas

 

7/16 Breakfast, Lunch & Dinner

Breakfast: 

Oatmeal with blueberries, almond milk, cranberries, and sliced almonds

Snack: 

Sunny hemp granola bar

Lunch: 

My mom and I went out to Panera for lunch I had a bowl of black bean soup and then half of the soba noodle salad without the shrimp and the dressings on the side

Dinner: 

Very late like 8:30-9:00… I had 3-4 slices of veggie pizza (broccoli, corn, mushrooms, olives, and tomatoes) at California Pizza Kitchen with no cheese I was hungry! 

Dessert: 

A few vegan dark chocolate covered almonds

I feel like I’ve been gaining weight…it might just be because I’ve been on my period but I’ve been eating when I’m hungry and eating until I’m full. I’ve been letting my body decide when is the right time to eat. I now weigh approximately 125, definitely heavier than normal. Oh well though, just have to keep cycling!
