Omg I used to be obsessed with pot pie defintiely adding this to the list 😀

If you’ve ever been in the South, you’ve heard of pot pies. They’re usually made with chicken and veggies in a thick, creamy sauce. Well, as a Vegan, you could make the pot pie without the chicken…but the heavy cream? Without the cream, the pot pie just doesn’t work right. This here is our shot at it, and it is great! The sauce is thick and creamy, and the crust is just awesome.

Veggie Pot Pie


  • 1 package puff pastry, thawed (yes, it is Vegan!)
  • 2 cups mixed frozen vegetables
  • 1 can diced potatoes, drained
  • 1 cup almond milk
  • 1 1/2 cup vegetable broth
  • 2 tbsp Earth Balance buttery spread
  • 4 tbsp flour
  • 2 stalks celery, chopped
  • 1/2 cup onion, chopped
  • 1 tsp extra virgin olive oil
